Curry in Hurry 

This quick recipe features chickpeas (pulses), it's rich, creamy, satisfying and you can easily prepare it after busy day at work. 
It's a recipe which should be in the repertoire of any working professionals. Within just 25 min you can prepare it after a busy day at work

Ingredients

✅ 500g sweet potatoes
✅ 1 tin of chickpeas
✅ 200g spinach  (can be frozen)
✅ chopped onion
✅ 2 cloves of garlic
✅ 1 inch of chopped ginger
✅ 50g of peanut butter (smooth or crunchy - depends on your preferences)
✅ 200 ml coconut milk
✅ 1 teaspoon of chili powder adjust to your preferences)
✅ 1 tablespoon of coriander powder
✅ 1 teaspoon of turmeric powder
✅ 1 tablespoon of soya sauce or tamari if you are gluten free

Method

1. Start with potato preparation, you can bake in the oven at 180C for about 30 minutes or microwave for about 9 minutes on high power. When soft cut them in a mouth size bites
2. Using a water frying method fry onion, then add garlic and ginger
3. After they are all soft and translucent add all the spices and fry for about 1 minute
4. Add peanut butter, coconut milk with splash of water and soya sauce until creamy sauce will form. Taste it, and adjust to your preferences, extra chili, coriander powder or soya sauce
5. Add all the remaining ingredients, mix it and cook for another 3 minutes
6. Serve it with brown rice or you can go less traditional and use buckwheat or quinoa.
