A dairy free version of a favourite comfort food - vegan cheddar broccoli soup- perfect for an everyday meal or a dinner party, to spoil your guests. @HERBYVORE™ HERBY-CHEESE CHEDDAR makes it sooo creamy and melts beautifully, the ultimate comfort in a bowl.

Vegan Cheddar Broccoli Soup
1 onion, finely chopped
3 cloves of garlic, minced
2 celery sticks
1 carrot, shredded
1 big potato, diced
1 tablespoon of mustard
Approx. 900 ml of vegetable broth
1 tablespoon of miso paste
1 teaspoon smoked paprika
160g of shredded @HERBYVORE™ Herby-Cheese Cheddar
1. Heat 1 tablespoon olive oil in a large pot 2. Add the onions and garlic and sauté for about 4 to 5 minutes 3. Add potato, carrot and celery stick and sauté for another 3 minutes 4. Pour in vegetable stock and cook until potatoes are[i] semi soft 5. Add broccoli florets and continue simmering until all vegetables are soft 6. Blend the soup until smooth 7. Add miso paste, mustard, smoked paprika and pepper 8. Taste and adjust to your taste
9. Add shredded Herby- Cheese Cheddar and stir until melted
10.Serve immediately, (it tastes best when hot)
