Mediterranean Eggplant Bites

Unexpected guests. It recently happened to me and I looked around quickly for something healthy and delicious, In the fridge I found an eggplant, and there it was 'eggplant bites'. A tasty treat and no need for the cubes of cheese which you used to serve with the wine.


✅1 eggplant
✅100g green pitted olives
✅50g walnuts
✅1 clove of garlic
✅2 tablespoons white wine vinegar
✅ 1 teaspoon fennel powder
✅2 teaspoons coriander powder
✅Salt, pepper to taste
✅Sun dried tomatoes, pomegranate to garnish

1.   Preheat the oven to 190C
2.    Cut eggplant into 1 cm thick slices
3.    Arrange eggplant slices on a baking sheet (or two if you don’t have room). Once you’ve laid out the slices in a single layer,         drizzle them with olive oil and season them with salt.
4.    Roast the eggplant for about 30 in. I like to cook them until they are soft and golden
5.    Blend walnuts, olives, garlic, vinegar and spices to a smooth paste, set aside
6.    Once eggplant has cooled spread on the olive walnut mixture, top with chopped sun dried tomatoes
7.    Sprinkle everything with pomegranate seeds and serve immediately
